Minty Vegetable Stew

A light, refreshing Middle Eastern stew made with courgettes, tomatoes, garlic, and dried mint — simple, healthy, and perfect as a quick summer or weeknight meal.

⭐ Ingredients

  • 1 can tinned tomatoes (with juice)
  • 2 fresh tomatoes
  • 3 courgettes / zucchinis
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon sea salt (or to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon dried mint
  • 1 tablespoon olive oil
  • 1 cup water
  • Optional: lamb or beef meat cubes (pressure cook separately if using)

⭐ Instructions

Prep the Vegetables

  • Finely chop the onion.
  • Cut the courgettes and fresh tomatoes into medium-sized cubes.
  • Dice the tinned tomatoes (keep all the liquid — it adds flavour).
  • Mince the garlic.

Cook the Stew

  • Sauté aromatics Heat olive oil in a pot. Sauté the onion for 3 minutes until translucent. Add the garlic and cook for 1 minute on low heat (don’t let it brown). Stir in sea salt and black pepper.
  • Add tomatoes Add both the tinned and fresh tomatoes. Stir and cook for 2 minutes to soften.
  • Add courgettes Add the courgettes and pour in the liquid from the tinned tomatoes plus 1 cup of water. Do not stir — this keeps the courgettes from breaking down too much.
  • Simmer Cover and cook on low heat until courgettes are tender (10–15 minutes).
  • Finish with mint Once the vegetables are cooked through, stir in the dried mint. Taste and adjust seasoning as needed.
  • Optional: Add meat If adding protein, pressure cook lamb or beef cubes separately and stir them in after the dried mint.
